Well, here we are, September already! The boy is back in school now and it's all back to routine, I'll start the food diary tomorrow but first thought I would update you with my summer. While we didn't go abroad at all we did spend a few days up in Northern Ireland, mostly so I could accomplish a nearly life long goal to see the Giant's Causeway. Also up there is the photo you see above: The Dark Hedges in Co. Antrim which is so beautiful! They are 300 year old beech trees and while it took a little while to find (many thanks to the lady in the petrol station!) it was so worth it.

As mentioned above it's been an dream of mine to go to
Giant's Causeway in Northern Ireland since I was in my early teens, I've just always been fascinated with the place. It did not disappoint. Absolutely incredible, stunning area and I would easily go back as there is a lot more too it than the basalt columns. We walked and hiked quite a bit and
still missed some areas.

This is the new visitor centre which just opened this summer, very cool building itself and all very informative.
Seeing the columns vertically is very cool!

| Titanic Exhibition, Belfast |
As well as that we HAD to take the boy to the newly opened Titanic Exhibition in Belfast as he has been very interested in the Titanic since all the 100 year anniversary stuff has been on. As we live near Cobh in Cork which was the last stop the Titanic made before setting off we have been to the museum there a few times but of course the ship was built in Belfast and it's a pretty incredible exhibition. Although, I must confess to being even more impressed with the building itself!
We also of course saw Belfast itself, but only had about an hour to walk around so missed a lot I'm sure but it's a lovely city. I loved this building in particular :-)
So that was our little holiday, and what about
food you ask? Well, most new things have been blogged but I also experimented with the following:

Both very good but need tweaking in one way or another. I've also made lots of cookies and have these beauties lined up to blog ;-)
But you'll have to wait to find out what they are!!!
Lastly, I got some amazing news regarding the blog this summer. A publisher contacted me to discuss me writing and vegan cookbook. An incredible opportunity and one I was overjoyed to even be asked, unfortunately for a whole list of reasons I don't want to get into I had to turn it down. I know. What kind of food blogger turns down a cookbook deal?? Well, me apparently :-( Mostly it was down to timing, so, who knows? Maybe one day in the future.....
